Tomato and mozzarella salad
This is a very traditional Italian recipe. It’s delicious, very easy to make and it good for you! This salad contains few ingredients so that the flavors will shine through.
· 1 ½ cup of cherry tomatoes
· ¼ cup of mozzarella balls
· Extra virgin olive oil
· Balsamic vinegar
You will also need:
· Salt and pepper to taste. We recommend using white pepper since black is stronger. Two teaspoons should be plenty.
1) Add all ingredients into a bowl and mix lightly, coating everything equally with the oil and vinegar. As an extra step, you can lightly toast the bread and rub garlic on it for a crunchy, delicious texture. If you want to follow this Italian recipe exactly as it is served in Italy, omit the garlic and butter because Italians traditionally eat their bread dry.
2) Allow the salad to sit for 10 minutes so that tomatoes release some of their juices and combine flavors. After this time has passed, add salt and pepper to taste.
3) Enjoy! You can also add vinaigrette dressing if you want, but it is fine without it. This salad makes a perfect side dish and tastes best when enjoyed right after it’s made!
Chicken Parmigiana
This is an all-time classic of Italian cuisine. It’s very easy to make and will impress your guests. The ingredients are easily found worldwide, making this chicken dish something that you can enjoy at every corner of the globe! This recipe will give you an idea of how it should taste; if you prefer a spicier flavor, feel free to add some of your favorite spices.
· one chicken breast per person, cut into half-inch discs
· two eggs are beaten with ½ cup milk and seasoned with salt and pepper
· Flour for dredging
· One cup of bread crumbs
· 3-4 tablespoons olive oil or butter to fry
· Marinara sauce for serving
1) Place flour in a dish and season it with salt. Put the egg mixture in another dish. Add the breadcrumbs in a third one and put in half of the salt.
2) Dip a piece of chicken first in flour, then in egg mixture, and finally coat it with bread crumbs. Make sure you cover every surface of the meat. Repeat with all chicken pieces and place them on a dish to prepare for frying.
3) In a frying pan, heat some olive oil or butter on medium-high. When it is hot enough, place the chicken pieces in the pan and fry them on either side for a few minutes.
4) In a baking dish, put some marinara sauce on the bottom of it and lay the chicken pieces over it. Cover each piece with sauce and sprinkle mozzarella cheese on top of it. Bake in a preheated oven for 10 minutes at 200 degrees Celsius.
5) Serve with spaghetti or another type of pasta.
